Butt=Kicked

Let’s look over today’s activities…

This morning I went for a run/jog, whatever you wanna call it, and it kicked my butt!  

*Caution: Sweaty Post-Run Pictures Ahead!* :-P

I NEED Water!

 

Yeah, not my best run ever. I actually had to stop halfway through. (I probably sound so wimpy because I know so many bloggers that are running half and full marathons, but I don’t care – I’ll get better!) :-?   

After jogging I did some cool-down stretching and unloaded the dishwasher. Then, I got myself a tall glass of water and sat in front of the computer for a while.  

Once my mom, dad, and Phil came home I made lunch and enjoyed it with the family. :-D   

Lunch:  

Chicken Wrap  

  • 1 FlatOut Light tortilla
  • grilled chicken breast
  • avocado
  • spinach
  • tomato
  • onion
  • Tabasco
  • cumin & pepper

With my luck, right when I was going to take a picture of lunch my camera battery died. :-( These pictures were taken with my mom’s camera (which usually isn’t this blurry…)

After lunch I charged my camera, went to the dogs, then went swimming for an hour! I love swimming! ♥  

Once I came home I took a shower and then had a snack. 

Snack: 

  • baby carrots and cherry tomatoes
  • Tribe Hummus

 

I also had some cantoloupe a little while later. (Not pictured) 

Tonight’s dinner was leftover BBQ Pork Chops and Caprese Salad (tomatoes + soft mozzarella cheese + basil + balsamic vinegar).  

 

I ♥ Caprese Salad! (It’s hard to believe when I was little I hated tomatoes!) ;-)  

What we did after dinner was my favorite part of the day…we went to the races! (Car races, that is.) There were all different types of cars racing tonight: Street Stocks, Modifieds, “Twin 20′s”, Sportsmans, Legends, and Factory Stocks. (Don’t know what they are? Neither do I – all I know is that they are types of cars! Haha! :-) )

Going For A Jog!

Hey Bloggies! :-P This is going to be a pretty quick post because I want to go jogging before it gets crazy hot outside!

After walking to the dogs this morning I came home and made some breakfast.

Breakfast:

Sweet, Savory, and Filling! ♥ Perfect pre-jog food. (in my opinion)

In case you don’t already know I am going to do a little background on why I jog. When I was applying for high schools all the forms asked what sport I played, right away I looked for the little box that said Karate or Martial Arts, but of course there was no box. My mom actually asked why Karate wasn’t on the list, and the woman at the desk simply said “because it’s not a team sport, we look for individuals that are able to work together in a team setting.” Of course that got me pretty angry, but then the lady said I should just put down what I was planning on playing in high school. I looked down the list: Soccer…no…Softball…no…Basketball…no….Track…maybe. I decided to sign up  for track because it seemed pretty simple (boy, was I wrong!) and people always told me I would be a good runner since I had long legs.

That brings me to today. I have been taking short (about 1 ½ mile) jogs since April in order to prepare for track and cross-country tryouts. In April, May, and some of June I was pretty good with taking a jog at least 3 times a week, but once the summer started it got too hot outside and I would get tired from the heat. I would still jog on the Wii Fit Plus, but let’s be honest: it’s not the same. Of course, being the procrastinator that I am, I am a little rusty (for lack of a better word) and cross-country tryouts are next week! Hopefully after a few good jogs the rust will go away and I will be ready (somewhat) for tryouts! :-P

Please excuse poor grammar and rambling, I am no writer! :-)

Everything Except The Kitchen Sink

PBA&B Sandwich

After going to the dogs a few times, going to Sams Club, and running other errands I was (finally) able to come home and make lunch. 

Lunch was a salad consisting of everything except the kitchen sink: (well, almost ;-) ) 

  • romaine lettuce
  • spinach
  • grilled tofu
  • corn
  • grape tomatoes
  • onion
  • blueberries
  • olives
  • parmagian cheese
  • Fresh Tomato Dressing

While I was taking a picture of my salad (outside again) Fluffy started begging for some attention. Check out the new haircut! (Before the cut, she definitely lived up to her name: Fluffy!) :-D

 This afternoon held a lot of cleaning, math, and reading. (Boring! :-P ) 

Before dinner I had the rest the apple from my sandwich this morning. ↓ 

  

Dinner was very rushed because we had to go to a special mass at church in honor of my deceased great-grandparents. (We go to a very small Ukrainian church – none of the masses are in English! Arg! :-? ) 

 

Dinner: 

  • BBQ Pork Chop (bone-in, that’s why it looks so huge ↑) ;-)
  • baked potato w/ Brown Cow
  • baby carrots

Mass was, um, rather uneventful. Is it considered “sinning” to say that I find mass boring? Well…I only find mass at my mom’s Ukrainian church boring, whenever we go to my dad’s church with ENGLISH masses I’m rather interested. :-?  

After mass my mom, Phil, and I went swimming for an hour and a half. When we came home I had a snack, took a shower, and then played Sequence with mom and Phil. (Can you tell Phil and I are grounded? Haha, no TV.) :-D  

Well now I have to go to bed since my mom is only letting me post this because she knows how obsessed I am with blogging much I care about blogging. ♥

Peanut Butter, Apple, & Bacon Sandwich

Does that title have you confused? Are you trying to figure out what kind of peanut butter sandwich I had this morning?  

I will not leave you guessing any longer…it’s one of my own creations! 

 

Peanut Butter, Apple, & Bacon  Sandwich :-P  

Ingredients: 

  • 2 tablespoons apricot preserves (I used Apricot Pineapple Jam)
  • dash of cayenne pepper
  • 2 slices whole grain bread
  • ¼ of a large Granny Smith apple, cored and thinly sliced
  • 2 slices turkey bacon, crisp-cooked and drained
  • 1-2 tablespoons creamy peanut butter
  • 1 tablespoon butter, softened

Directions: 

  1. In a small bowl stir together preserves and cayenne pepper. Place 1 slice of bread on work surface; spread with preserves. Top with apples and bacon. Spread the other slice of bread with peanut butter; place, spread side down, over apples and bacon. Spread sandwich top with some of the butter.
  2. Preheat griddle or large skillet over medium heat. Place sandwich, buttered side down, on griddle. Carefully spread unbuttered bread with butter. Cook 2-3 minutes per side or until bread is golden and sandwich is heated through.
  3. Enjoy! :-)

I love this sandwich – it’s such a flavor explosion! ♥

Apricot Pineapple Jam

Here it is, as promised, the recipe for Apricot Pineapple Jam! :-D

No Sugar-Added Apricot Pineapple Jam :-P

based on a recipe from All Recipes.com

Ingredients:

  • 12 ounces dried apricots
  • 1 cup water
  • 1 can (20 ounces) crushed pineapple, undrained
  • ½ cup grapefruit juice (I used the juice of 1 grapefruit.)

Directions:

In a large saucepan, bring apricots and water to a boil. Reduce heat; cover and simmer for 15 minutes or until apricots are very tender. Mash. Add pineapple and grapefruit juice. Simmer, uncovered, for 1 hour or until thick and translucent, stirring frequently.

Pour into jars or freezer containers; cool to room temperature, about 1 hour. Cover and let stand overnight or until set, but no longer than 24 hours. Refrigerate for up to 3 weeks or freeze for up to 1 year.

How cool is that – an all-fruit jam with no sugar added! :-)
