What I’m Loving: Eggs

by Erika

Lately I have been enjoying whole, hard-boiled eggs a lot more than usual.  Why, you ask?  I don’t really know considering the only foods I usually ”crave” are sweets, but I’m not complaining because eggs are super healthy! :-)

Although eggs sometimes get a bad rap for the high amount of cholesterol they contain, they are by no means “unhealthy.”  There are actually studies showing that the cholesterol in eggs have less of an impact on your LDL [bad] cholesterol than foods high in saturated fat. Plus, eggs are filled with healthy protein, fats, vitamins, and minerals, so the benefits outweigh the drawbacks! :-)

Protein

  • The protein found in eggs is the best for your body because it is absorbed faster than other proteins.
  • Eggs are accessible, cheap, and easy to prepare.  Try using eggs as the main protein in your next meal – your body will thank you!
  • The average chicken egg has 6.3 grams of protein.

Healthy Fats

  • Egg yolks are filled with healthy Omega-3 fats.
  • Omega-3 fats are important for a healthy heart and soft, smooth skin.
  • The combination of protein and healthy fats in eggs help keep you full.

Vitamins & Minerals

Eggs are rich in many important vitamins and minerals such as:

  • Vitamin A, D, E, and K
  • A variety of B vitamins including B1, B2, B6, and B12
  • Biotin, Choline, Folic Acid, Pantotheic Acid, and Niacin
  • Zinc, Iron, Selenium, Phosphorous and Iodine

Studys have shown that the benefits of eggs outweigh the drawbacks. Just look at all of the nutrients they offer!

  4. I totally agree that eggs get a bad rap. More often than not, that is what I have for breakfast. And there are times when I will grab a hardboiled egg as an easy, filling snack. They can be very healthy as long as you don’t eat tons of them every day. They are awesome!
