Nut Butter Stash + Giveaway

by Erika

Today I got a question on my Formspring asking me how many jars of peanut butter I owned.  I found the question pretty interesting and decided to do an entire post on it.  Enjoy! :-D

*****

Well, Anonymous, to answer your question I currently own six jars of nut butter.  Mostly peanut butter.

I also own a plethora of nut butter packets [I'm actually low on them right now.]

Notice the numerous packets of SunButter that were sent to me by the lovely Katie.  They aren’t the best tasting things in the world, but I still like them.  Does anyone have any good recipes including sunflower seed butter?  If so, please share! ;-)

Back to the other nut butters.  It was tough, but I actually managed to choose favorites!  Below are my nut butters [ordered from the most delicious to the semi-delicious]:

  1. PB&Co. White Chocolate Wonderful
  2. Skippy Natural Peanut Butter
  3. Nutella
  4. Whole Foods 365 Almond Butter
  5. PB&Co. Dark Chocolate Dreams
  6. Better N’ Peanut Butter

I told you guys that White Chocolate Wonderful was a winner!  ♥

Mmmmm…

So tell me…  Do you have a nut butter stash?

                        What’s your favorite nut butter?

Good News/Bad News

by Erika

Gooooooood Mooooorning! :-D

I have some good news and some bad news.  Which one do you want to hear first?  [What? Whaaaat?! Can't hear you!]

Okay…bad news it is. :-?

The bad news is that I couldn’t fall back asleep this morning when I woke up at 8AM.  [That doesn't sound that bad but I went to bed at midnight last night.]

The good news is that I took full advantage it and baked. :-D

Any guesses?!

Well, if you guessed April’s Crustless Pumpkin Pie, than you were correct!

Ever since April posted this recipe I have wanted to make it for two reasons.

  1. Because it’s pumpkin pie and I love pumpkin pie!
  2. You can eat the whole pie for only ~250 calories!  [And it's packed with a whopping 26 grams of protein!]

Now, I did not eat the entire pie, because I would feel like a major piggy.  But I did have a 1/4 of it along with some yogurt and granola.

*Note: I refrigerated the pie until cooled.  It tasted much better cooled. :-)

Breakfast:

1/4 of April’s Crustless Pumpkin pie, 2/3 cup light vanilla yogurt, and Coco-Nutty granola

The Result?  It was delicious!  Although, I could really taste the pumpkin when it was fresh out of the oven, it tasted just like pumpkin pie once it was cooled.  My Mom and Phil also agreed.  Phil said it was “The best pumpkin pie I’ve ever made.”  [I've never made pumpkin  pie before, but I guess he liked it!] ;-)

Now I just have to convince my Mom to let me make it for Thanksgiving instead of our usual store-bought pie…

Talk about a great entry for the Healthy Thanksgiving Challenge! :-)

Question of the Day:

  1. What is your favorite Thanksgiving Pie?  Apple, Pumpkin, or Pecan?     Mine is pumpkin!
