Happy Thursday!
I am so glad I am not sick anymore! After a whole week of feeling sluggish and achy, it feels absolutely amazing to feel healthy again! This morning I celebrated and made myself a delicious bowl of oats. ♥
Breakfast:
1/2 cup oatmeal, cooked stovetop and topped with stewed apples, shredded coconut, and chopped brazilian nuts
Oh so comforting…
My oatmeal consumption goes through the roof in the colder months.
My stewed apple consumption also goes through the roof…

Lately I’ve received a couple of emails asking for my stewed apple recipe. I’ve posted approximate measurements a few times but never actually considered it a recipe…until now.
Here you go…
Stewed Apples [For One!]
“These easy to prepare stewed apples are perfect on anything! My favorites are over oatmeal or cottage cheese.”
Ingredients:
- ½ an apple, cut into ½-inch cubes [Fuji and Honeycrisp work best.]
- scant ¼ cup water
- 2 sweetener packets
- 2 teaspoons cinnamon
- optional: 1 tablespoon maple or pancake syrup
Directions:
- Combine all ingredients in a medium-sized cereal bowl.
- Microwave on high for 1 ½ minutes.
- Drain excess liquid and serve.
Yield: 1 serving

Sorry for the lack of posting lately. I’m sure my fellow bloggers know how it is – when you’re sick you have no energy to do any computer work nonetheless sitting down and writing a post!
