Chocolate Chip Cookie Brownies

I’m always talking about my huge sweet tooth, so it comes as a shock to people when I admit that I am not a regular dessert eater.

Don’t get me wrong, I eat dessert sometimes, and when I do I make sure it’s worth it.  ;-)

If I had to choose between a  fruity sorbet and a double fudge cake, I would almost always go for the cake.   

Remember a few weeks ago when my Track buddy brought in cookie-topped brownies for Valentine’s Day?  Well, I finally found time to make remake them and I think they’re even better than the originals.  :-D

Chocolate Chip Cookie Brownies

“This vegan dessert is decadent, gooey, and delicious.  It’s a slice of chocolate bliss.”

Ingredients:

Brownies:

  • 2 cups all-purpose flour
  • 1 ½ cups organic sugar
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup water
  • ½ cup canola oil
  • ½ cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Cookies:

  • ½ cup organic brown sugar, packed
  • ¼ cup organic granulated sugar
  • 2/3 cup canola oil
  • ¼ cup nondairy milk or water
  • 1 tablespoon corn starch
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2/3 cup vegan dark chocolate chips

Directions:

Brownies:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla; mix until well blended. Spread evenly in a 9×13 inch baking pan.
  3. Bake for 25 minutes in the preheated oven.

Cookies:

  1. Combine sugars, oil, nondairy milk, and tapioca flour in a mixing bowl. Use a strong fork and mix really well, about 2 minutes, until it looks like smooth caramel. There’s a chemical reaction when sugar and oil collides, so blend well. Mix in vanilla.
  2.  Add 1 cup flour, the baking soda, and the salt. Mix well. Mix in rest of flour. Fold in chocolate chips. The dough will be a little stiff.  Flatten into sheets and place on top of the half-cooked brownie. 
  3. Bake for 10-15 more minutes.  Let cool for 30 minutes, cut into squares and serve.

Yield:  Approximately 15 servings

This brownies are freaking amazing, if I do say so myself. ;-)

Philip and I both ate two…for a snack.  They’re that good.  Can you say sugar coma?

I know the recipe seems like a lot of work, but it’s worth it.  This is the richest brownie I’ve ever tasted!

  2. Well depends on what you call dessert but i always incorporate some chocolate into my day, whether it’s chocolate chips or cocoa almonds. I think vitatops are a good alternative to something sweet :)

  3. I love chocolate so much my favorite is dark, but I try to limit myself to dessert only a couple times a week. Greek yogurt to me tastes as good as a dessert though so it’s all good!

  4. We don’t eat dessert every day…..but I definitely eat chocolate in some form on a daily basis! =D

  5. holy moly guacamole! this is SO DECADENT!!! im not a fan of big desserts cuz they really get my stomach upset but sometimes tehe stomach ache is SO SO WORTH IT!

    I am absolutely a chocoholic, but I don’t consider pieces of chocolate dessert. I have it almost every day!

    I’m def a chocoholic! I go into phases of eating dessert though… I feel like I might eat some chocolate every day for a week, then go a week without anything.

  23. I used to eat dessert every day but I had a hard time controlling it. I don’t have dessert on the weekdays but may allow myself some on the weekends, somewhat of a compromise! :) And I’m definitely a chocoholic!

    • Cornstarch and tapioca flour can be used interchangably. I originally wrote cornstarch assuming that most people don’t have access to tapioca flour. Enjoy!

  30. I am so excited to make this, but have a question…
    The ingredient list alls for 1T cornstarch, but the directions say to add tapicoa flour. Can you please confirm which I should use and how much? THANK YOU!
