No Flashback Friday?

Alright.  I know I promised you an “action-packed Flashback Friday” post today, but it’s not working out.  When I sat down tonight to start writing it I got major writer’s block and the post did not look good.  At all.  So instead of leaving you with a boring and ugly-looking post I decided to suck it up and post something else.  A recipe for those Chewy Nutella Cookies I was raving about the other day:-D

Chewy Nutella Cookies

Slightly adapted from The Recipe Goldmine

“A decadent chewy chocolate hazelnut cookie.  You know you want one…and then another and another and another.” ;-)

Ingredients:

  • 1 cup + 2 tablespoons whole wheat flour
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 8 tablespoons unsalted butter (1 ½ cups), melted
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup Nutella
  • 1 egg + 1 additional egg yolk
  • 2 teaspoons vanilla extract
  • 1-2 cups dark or semi-sweet chocolate chips

Directions:

  1. Preheat oven to 325ºF and spray a baking sheet with nonstick spray.
  2. Mix flour, salt, and baking soda together in medium bowl.  Set aside.
  3. In a separate bowl, mix butter and sugars until thoroughly blended.  Mix in Nutella, egg, yolk, and vanilla extract.  Add dry ingredients; mix until just combined.  Stir in chips to taste.
  4. Form cookie dough into golf ball-sized balls and place on the baking sheet. Bake until cookies are a light golden brown and edges begin to harden, while the centers are still soft and puffy, 13-18 minutes (depending on your oven.) Let cool.  Serve immediately or store for up to 4 days in an airtight container. (Not that they’ll last that long!) ;-)

Yield:  ~2 dozen cookies

I wish I took more pictures of these cookies, but sadly they never found their way back home after the party.  They were all gone within the first 15 minutes!  I guess I can’t complain though.  It’s better than bringing them all home!

One thing that caught my attention at the party was that half of the class didn’t know what Nutella was!  Are these kids living under a rock?!  Someone tell me I’m not the only one obsessed with the stuff.  Please?

Went a little off-topic there for a moment.  Oh well.  Story of my life suppose.  Today I was in the middle of telling my friend about my shovelling experience when I randomly asked her how she liked English and if she was a good writer.  Weird.

OKAY ERIKA!  Back to the cookies!  Oh yeah, the cookies, how could I forget?  Here’s the recipe for the optional, yet highly recommended glaze.

Nutella Glaze

Ingredients:

  • 1 cup powdered sugar
  • ½ stick of butter, melted
  • ¼ cup Nutella
  • ¼ cup milk (add more milk for a runnier glaze and less for frosting)
  • 1 tablespoon vanilla extract

Directions:

  1. Place all ingredients in a medium mixing bowl.  Using an electric mixer (or a wire wisk) combine ingredients until they come to a creamy consistency.  Add more milk as needed. 
  2. Heat in the microwave for 15-20 seconds and drizzle over cookies.  Enjoy!

Because nothing makes you crave Nutella more than a bunch of sweaty wrestlers?  Just roll with it…

Flashback Friday: Ghosts of Christmas’ Past

My Year To Put The Angel On!

Christmas of 2007 was a pretty good one.  I got two really awesome gifts.

A Trampoline

My First Cell Phone

I was so happy when I got that cell phone.  I was in 6th grade at the time and all of my friends had gotten cell phones in the beginning of the school year, while I had to beg and plead for my parents to get me one for Christmas. ;-)

It turned out that “my first phone” was actually a piece of crap, but oh well.

Every year we go to my Babi’s house on Christmas Eve for a traditional Ukrainian meal and every Christmas Day everyone comes to our house around noon until 9PM.  Below is a picture taken after everyone left the house on Christmas.  [Please take note of my parent's tired faces while Philip and I look ready to run a marathon 5K.] ;-)

Christmas of 2008 was also a good one. 

It was Philip’s year to put the angel on the tree.

The big present of 2008 was the Wii Console and Wii Fit.  We still play the Wii almost everyday! :-P

And last, but not least, Christmas of 2009! :-D

It was my year to put the angel on the tree, however I can’t seem to find a picture, so instead enjoy this picture of Philip, Mikey, Matthew, and I in front of the Christmas Tree. :-)

I got my favorite gift – a 3-pack of Nutella. ♥

Oh and I also got Guitar Hero.  A year later and I am still terrible! :-P

Flashback Friday: Loaded Oats

[Alternate title: No More "Boring" Oatmeal]

Once upon a time… there was a girl who didn’t particularly like oatmeal.  This girl wasn’t crazy about oatmeal and would eat a bowl of it 5 times a year, tops.  She didn’t like oatmeal because in her mind it was “boring,” after all, she would eat it plain with the only topping being a sprinkle of cinnamon.

The girl was me: Erika. :-)

Up until a year ago [before I discovered the BlogWorld] I thought oatmeal was a bland, tasteless, bowl of carbs.

*GASP!*

I know…I know…I was sadly mistaken. After all, just look at Kath‘s oatmeal creations! ;-) They are the exact opposite of boring.

If you look back at some other oatmeal adventures on my blog you can see that my toppings have gotten better, but not as good as the other day’s bowl of oats.

Peanut Butter Cinnamon Oatmeal

French Toast Oat “Sundae”

Yeah, some of them were really bad. I mean, c’mon, French Toast Oatmeal “Sundae?!”  Plus look at the general appearance of the photos.

Okay enough looking at *those* bowls of oats. Although I started putting toppings on I never really reached the same level as Kath until the other day.  Just look at this deliciousness. ↓

Ohhhh yeah!

A bowl of oatmeal topped with:

  • Stewed apples*
  • Dried cranberries
  • Chia seeds
  • Almond butter
  • Cinnamon

I used so many toppings that I actually had to use bullets to list them all. ;-)

*To make stewed apples [AKA baked apples] cut ½ an apple into bite-sized pieces [about ½-inch] and place into a medium bowl. Add ¼ cup water, a dash of cinnamon, 2 packets sweetener, and a bit of syrup or agave. Microwave for 1½ – 2 minutes on high. Let cool and serve! :-)

My oatmeal [and picture-taking] skills have come a long way!  This was by-far the best topping combination I have ever had! ♥ Yummy!

I guess *that girl* was wrong about oatmeal… ;-)
