Peanutty Protein Pancakes

Now try saying that 10 times fast… ;-)

A few days ago, I was trying to think of more uses for Peanut Flour.  Different recipe ideas crossed my mind, but ultimately I chose pancakes.  I mean, who doesn’t like pancakes?!

Peanutty Protein Pancakes (or P³)

Ingredients:

  • ¼ cup peanut flour
  • ¼ cup mashed banana (approximately ½ medium banana)
  • 1 egg
  • 1 tablespoon chopped peanuts
  • 1 tablespoon milk or water
  • ¼ teaspoon baking powder
  • ¼ teaspoon vanilla extract
  • A pinch of salt and cinnamon

Directions:

  1. In a small bowl, combine all dry ingredients (flour, baking powder, salt, cinnamon) until well mixed.
  2. In a separate bowl, combine the mashed banana and the wet ingredients (egg, milk, vanilla) until smooth and well mixed.
  3. Add wet ingredients to dry and mix well.  Let stand for 5 minutes.
  4. Heat a large pan over medium high heat.  Spoon batter onto pan forming 3 pancakes.  Let cook for 90-120 seconds or until easily flipped with a spatula.  Cook for 90 seconds on the other side.
  5. Plate, eat, enjoy!

Yield:  One serving (3 pancakes)

When I sat down to eat these pancakes something terrible happened:  I put syrup on my pancakes! :-?

You might be asking, “Why is that terrible?”

It’s terribly weird of me because I never put syrup on my pancakes.  Never.

Today I couldn’t resist, though, it wasn’t any syrup.  It was a mixture of Aunt Jemima Lite syrup and peanut butter.  Mmmmmm…

Delish.  I have been missing out.  Big time. 

The pancakes were soft, fluffy, and somewhat dense.  All humbleness aside, they were perfect.

My Nutty Contribution

A few days ago I jumped on the bandwagon and bought 2 bags of peanut flour.  Since then I’ve been enjoying it almost everyday in a variety of recipes. I love it! ♥

Being the foodie that I am, however, I wasn’t content with just copying other people’s recipes and felt the need to create a couple of my own.  So I did!

I enjoyed this little beauty a few days ago during my two days of SFW – I just omitted the sugar!  Since then I’ve made about 4 more batches.  Healthy peanut butter cookie dough?  Sign me up! ;-)

Protein Peanut Butter Cookie Dough

Inspired by April’s Protein Cookie Dough

“This vegan cookie dough* has the ability to fool even the pickiest of eaters.  I fed it to my brother numerous times already and he wasn’t the slightest bit suspicious…”

Ingredients:

  • ¼ peanut flour
  • 3-4 tablespoons water
  • 1-2 teaspoons peanut butter
  • ~1 teaspoon sugar
  • 1 tablespoon dark chocolate chips (optional – I used a crushed Adora)

Directions:

  1. Combine all ingredients in a small bowl.  Stir until smooth, adding water until you reach desired consistency. 
  2. Serve, devour, repeat! ;-)

Yield:  1 serving

*Check your chocolate chips to make sure they’re vegan folks!

Hitting The Books…Hard!

Hello everyone!  I’m SO sorry for the lame posts as of late, but I have been hitting the books and studying hard for final exams! :-P

↑ That’s my “Ohmygosh I wish these exams would be over already” face.

I was originally going to do another product review post today, but I felt bad for posting 2 product reviews in a row.  I don’t know about you guys, but 90% percent of the time I think product reviews are really boring and don’t even bother reading them.

Instead I decided to give you a little snippet of my day – Final Exam Day 1.

Let’s start with breakfast.  My breakfasts are always filling and fill me up for a good 2-4 hours, but on exam days I always try to make my breakfasts even more filling considering I usually have to go 5 hours between breakfast and lunch.  Protein and fiber always seem to do the trick! :-D

Breakfast:

½ cup oatmeal, 2 tablespoons bran, and 1 egg white topped with ½ a packet of Cacao Bliss

I’m hoping that it was a good sign that the Cacao Bliss melted into the shape of a heart.  I love that stuff!

After breakfast I was off to school and had my Religion final first.  It was pretty easy, except for the fact that our teacher had us write 5 long essays!  We didn’t even have that many essays to write on the English final!  Speaking of English, once we were done with the Religion final we went right to English.  Each final was an hour and a half so I was out of there by noontime!  I suppose that was the one good thing that came out of finals. ;-)

My Mom picked me up and I made lunch immediately!  I was starving!

Lunch:

Grilled liverwurst and cheddar sandwich on rye and a spinach, cucumber, onion, carrot, and feta salad

I also had a Cinnamon Roll Larabar ball for “dessert.” ↓

Now I am eating an apple with peanut butter in honor of National Peanut Butter Day! :-D

Now that’s my kinda holiday…

Hmph.  I guess I should start studying for my World History final once I finish my jar of peanut butter apple.  I heard it’s terribly hard.  I guess that’s one class I won’t miss!

I can see tonight’s study session now…

Mom:  Why were the Plebeians dissatisfied with the early Roman Republic?

Me:  Um…because they were poor and they…um…wanted power?

Mom:  *marks question wrong*

Me:  WHY DID YOU MARK THAT WRONG?

Mom:  Because it was.  The correct answer was “because they were being mistreated by the Patritians, or upper-class, who made them do all of their dirty work.”

Me:  SAME THING!

Mom:  No not really…

Me:  ARGH!

Believe it or not, that’s how it always is when I am studying for history.  I have no idea how I am still passing that class…and with a 93 nonetheless! :-?

Anyways…I guess I should get going now.  Dinner’s going to be Chicken and Chickpea Chili in case you were wondering.

Ode To OIAJ

Oh, how I love OIAJ (and OOIAJ!)

*For those of you that don’t know what OIAJ or OOIAJ are that’s perfectly fine! I didn’t know what either of them were before Blog World either!

I seriously don’t know what I would have done if I hadn’t discovered Blog World!  I wouldn’t be enjoying the delicacy that is OIAJ that’s for sure! ;-)

This past week I had a lot of empty nut butter jars so I had OIAJ almost everyday!  Let’s take a look at the creations…

* Yeah, I know it’s not a natural peanut butter jar.  The store was out and we needed peanut butter.

Oatmeal topped with a crushed Adora Calcium disk

Overnight Oats topped with the last slice of Cranberry Orange Bread

I’d say that it a good week of breakfasts! :-)

Box Building

Hello Blog Friends! :-)

Don’t be fooled by the title of this post.  Yes, building my Light Box is an important part of this post, but that doesn’t mean my breakfast was un-important!

Behold…Tina’s Peanut Butter, Apricot, and Walnut Sandwich! :-D

I’ve had my eye on this sandwich ever since Tina posted it back in November.  Today was the day to make it! (Oh how I love being off from school!)

I didn’t have any cinnamon bread on me so I just used regular white wheat bread and sprinkled it with cinnamon sugar.

Then, I combined 1 tbsp. peanut butter, 1 tbsp. Apricot Pineapple Jam, 1 tbsp. dried cranberries, 2 crushed walnuts, and a drizzle of honey in a small bowl and spread it onto the bread.

 Afterwards, I popped it into the toaster oven for about 3 minutes and VIOLA!  A delicious breakfast for one. :-)

Now let’s move to the Light Box.

I first got the idea of making a light box from Katie who made a light box using (never)homemaker’s instructions.

I’ve been trying to incorporate more recipes into FFF lately because I know many of you love to cook/bake, as do I!  It actually might be one of my favorite things about healthy eating — healthy cooking/baking! :-)

Anyways, since I’ve been making more food and posting more recipes I figured it would be fitting that I make a light box so I don’t have to do all of my cooking/baking before it gets dark outside.  Good idea, right?

Here’s the view from the inside.

I’m so excited!  More details to come!

Sorry if this was a bit of a tease, but I’ll have a big post about it tomorrow once I finish it! :-)
